In Morocco there is a tradition on Achoura - a solemn day for Muslim people - where families buy plenty of nuts. In order not to waste all these goods, granolas could be a great idea. Plus it's a filling on-the-go snack full of proteins and fibers...and it's gluten free!
Too lazy to use the oven? try the no-bake version

You will need
60g nut powder (I use almond powder alone or I mix it with hazelnut powder, but you can choose any other combination)
100g mix nuts and seeds
80g rolled oats (for a gluten free version, make sure oats are labelled/certified gluten free)
50g creamy honey
60g butter
1/2 ts Kosher salt
100g dried fruits (apricot, figs, raisins, etc.)
I prefer to keep my granola bars free of chocolate, but if you want to add choco chips then 30g is perfect. If you do, pay attention not to let your chips melt. Add them at the end before the bar is going into the oven
Instructions
Preheat oven to 180°C
Place honey, butter and salt in the bowl. Mix 4min/ 100°C/ Speed 3
Add remaining ingredients (but oat rolls). Mix 15sec/ Speed 4
Stir. Add oats. Mix 5min/ 37°C/ Speed 2 - Reverse blades
Pour the mixture in a baking tray already covered with parchment paper. Press down firmly using a large spatula
Bake for 5min. Adjust the time according to the thickness of your bar, the thicker they are, the more time they need
Let it cool. Slice and serve
