You will need

  • 140g gluten free flour

  • 220g water

  • 1 Tbs muscovado sugar

  • 1 packet vanilla sugar

  • 110g butter

  • 3 eggs

  • 1 pinch kosher salt

  • 2 Tbs mix coconut sugar/cinnamon (Topping)

Instructions

  1. Preheat oven to 180°C

  2. Place water, salt, butter, muscovado and vanilla sugar in the bowl. Mix 5min/ 100°C/ Speed 1

  3. Add flour. Mix 1min/ Speed 3. Let it cool

  4. Mix 1,5min/ Speed 3. While TM is mixing, add eggs every 15 sec

  5. Place the dough in a pastry bag (or a plastic bag with the corner snipped off). Press the bag over a baking tray covered with parchment paper to smoothly pipe churros into strips.

  6. Spray churros with coconut oil.

  7. Bake churros for 20min

  8. Sprinkle with cinnamon/sugar mix

  9. Enjoy!

Gluten free and healthy

You will need

  • 450 dried Chickpeas, soaked.

  • 2 tbsp Tahini

  • 1/2 onion

  • 1 Tbs garlic powder

  • 1 Tbs dried parsley

  • 1 Tbs chopped cilantro

  • 1 Tbsp cumin

  • 1/2 tsp cayenne pepper

  • 1/2 tsp black pepper

  • 1/2 ts himalaya salt

  • Juice of 1/2 Lemon

  • 20g chickpea flour

  • 20g walnut flour

Instructions

  1. Preheat oven to 180°C. Falafel are traditionally deep-fried but I prefer the baked option for it is healthier

  2. Place the onion in the bowl. Mix 4sec/ Speed 4

  3. Scrape down the sides of the bowl. Mix 4sec/ Speed 4

  4. If not finely chopped, repeat

  5. Add remaining ingredients (apart from chickpea/oat flour). Mix 3sec/ Speed 10. Repeat twice.

  6. Meanwhile mix chickpea flour and oat flour into a bowl

  7. Shape small balls and roll the balls in the mix (chickpea/walnut) flour

  8. Place on a baking tray already covered with parchment paper

  9. Spray EVOO and bake for 10min until golden

  10. Turn the balls. Spray EVOO and bake for 10min until golden

  11. Serve immediately

  12. Enjoy!

As tasty and fudgy as the regular one

You will need


  • 75g gluten free flour

  • 150g butter

  • 80g muscovado sugar

  • 1 packet vanilla sugar

  • 40g raw cocoa powder

  • 40g choco chips

  • 3 eggs

  • 1 pinch kosher salt

Instructions

  1. Preheat oven to 160°C.

  2. Place sugar, vanilla sugar, butter and cocoa in the bowl. Mix 3min/ 65°C/ Speed 2

  3. Make sure butter has completely melted. If not, add 20sec/ 65°C/ Speed 2

  4. Add eggs. Mix 10sec/ Speed 4

  5. Scrape down the sides of the bowl.

  6. Add flour, choco chips and salt. Mis 5sec/ Speed 4

  7. Scrape down the sides of the bowl. Mix 10sec/ Speed 4

  8. Poor the batter into a mold or a tin already covered with parchment paper.

  9. Cook for 35min.

  10. Allow the cooked brownie to completely cool before cutting it

  11. Enjoy!
