You will need
140g gluten free flour
220g water
1 Tbs muscovado sugar
1 packet vanilla sugar
110g butter
3 eggs
1 pinch kosher salt
2 Tbs mix coconut sugar/cinnamon (Topping)
Instructions
Preheat oven to 180°C
Place water, salt, butter, muscovado and vanilla sugar in the bowl. Mix 5min/ 100°C/ Speed 1
Add flour. Mix 1min/ Speed 3. Let it cool
Mix 1,5min/ Speed 3. While TM is mixing, add eggs every 15 sec
Place the dough in a pastry bag (or a plastic bag with the corner snipped off). Press the bag over a baking tray covered with parchment paper to smoothly pipe churros into strips.
Spray churros with coconut oil.
Bake churros for 20min
Sprinkle with cinnamon/sugar mix
