We often think about Chinese soups as noodle based. Guess what, there are other versions to discover. Here is one of them, and this in particular is by far my favorite. It's very delicious, is prepared in minutes and doesn't require a lot of ingredients.

You will need

  • 200g chicken breast (small pieces)

  • 400g boiled corn (for a gluten free option, make sure corn is labelled/certified gluten-free)

  • 200g onion (diced)

  • 1,5l water

  • 3 eggs

  • 2,5 Tbs EVOO + 1/2 Tbs Sesame oil

  • Seasoning (himalaya salt, pepper, curcuma, ginger, cilantro, cayenne pepper, garlic powder)

  • Fresh chive (topping)

Instructions

  1. Plan onion in the bowl. Mix 5sec/ Speed 5

  2. Scrape down the sides of the bowl. Mix 5min/ Varoma/ Speed 1

  3. Add water, corn, spices and chicken. Mix 15min/ Varoma Speed 1

  4. Mix 10sec/ Speed 4

I like the ingredients of my soup blended so I always add 10sec/ Speed 8

  1. Meanwhile beat eggs in a separate bowl

  2. Mix 20sec/ Speed 2 and slowly pour beaten eggs through the hole.

  3. Top with fresh chive and serve immediately

  4. Enjoy!

In Morocco there is a tradition on Achoura - a solemn day for Muslim people - where families buy plenty of nuts. In order not to waste all these goods, granolas could be a great idea. Plus it's a filling on-the-go snack full of proteins and fibers...and it's gluten free!

Too lazy to use the oven? try the no-bake version

You will need

  • 60g nut powder (I use almond powder alone or I mix it with hazelnut powder, but you can choose any other combination)

  • 100g mix nuts and seeds

  • 80g rolled oats (for a gluten free version, make sure oats are labelled/certified gluten free)

  • 50g creamy honey

  • 60g butter

  • 1/2 ts Kosher salt

  • 100g dried fruits (apricot, figs, raisins, etc.)

I prefer to keep my granola bars free of chocolate, but if you want to add choco chips then 30g is perfect. If you do, pay attention not to let your chips melt. Add them at the end before the bar is going into the oven


Instructions

  1. Preheat oven to 180°C

  2. Place honey, butter and salt in the bowl. Mix 4min/ 100°C/ Speed 3

  3. Add remaining ingredients (but oat rolls). Mix 15sec/ Speed 4

  4. Stir. Add oats. Mix 5min/ 37°C/ Speed 2 - Reverse blades

  5. Pour the mixture in a baking tray already covered with parchment paper. Press down firmly using a large spatula

  6. Bake for 5min. Adjust the time according to the thickness of your bar, the thicker they are, the more time they need

  7. Let it cool. Slice and serve

  8. Enjoy!

If you've already made peanut butter, then any other nut/seed/nut butter follows the same process


You will need

  • 250g roasted almonds

  • 50g roasted sunflower seeds (I add sunflower seeds for the taste)

  • 20g Brown sugar

  • 20g Icing sugar

  • Kosher salt

I never add oil to my nut butters, my trick is to mix them until their own oil comes out


Instructions

  1. Place all the ingredients in the bowl. Mix 10sec/ Speed 7

  2. Scrape down the edges of the bowl. Mix 10sec/ Speed 7

  3. Scrape down the edges of the bowl and adjust salt. Mix 10sec / Speed 7

  4. Mix 10sec / Speed 7 as many times as necessary until desired consistency

  5. Store in a glass jar

  6. Enjoy!
