We often think about Chinese soups as noodle based. Guess what, there are other versions to discover. Here is one of them, and this in particular is by far my favorite. It's very delicious, is prepared in minutes and doesn't require a lot of ingredients.

You will need
200g chicken breast (small pieces)
400g boiled corn (for a gluten free option, make sure corn is labelled/certified gluten-free)
200g onion (diced)
1,5l water
3 eggs
2,5 Tbs EVOO + 1/2 Tbs Sesame oil
Seasoning (himalaya salt, pepper, curcuma, ginger, cilantro, cayenne pepper, garlic powder)
Fresh chive (topping)
Instructions
Plan onion in the bowl. Mix 5sec/ Speed 5
Scrape down the sides of the bowl. Mix 5min/ Varoma/ Speed 1
Add water, corn, spices and chicken. Mix 15min/ Varoma Speed 1
Mix 10sec/ Speed 4
I like the ingredients of my soup blended so I always add 10sec/ Speed 8
Meanwhile beat eggs in a separate bowl
Mix 20sec/ Speed 2 and slowly pour beaten eggs through the hole.
Top with fresh chive and serve immediately
