It's always good to have some frosting in your fridge. It's the best way to take any basic cake to the next level

You will need

  • 180g icing sugar

  • 90g cream cheese

  • 45g butter

  • 1/2 tsp lemon juice

Instructions

  1. Place all the ingredients in the bowl. Mix 20sec/ Speed 6

  2. Add your frosting once the cake has cooled down

You will need

  • Cream cheese icing

  • 400g sliced carrots

  • 250g walnuts

  • 200g flour

  • 180g muscovado sugar

  • 150g EVOO

  • 2 eggs

  • 1 tsp vanilla sugar

  • 1 tsp ground cinnamon

  • 1 tsp ground ginger

  • 1 tsp baking soda

  • 1/2 tsp ground nutmeg

  • 1/4 Himalaya salt

Instructions

  1. Preheat oven to 185°C

  2. Place walnuts in the bowl. Mix 4sec/ Speed 9. Set aside

  3. Place carrots in the bowl. Mix 4sec/ Speed 5. Set aside

  4. Place eggs, sugar and EVOO in the bowl. Mix 5sec/ Speed 5

  5. Add flour, vanilla, nutmeg, salt, cinnamon and baking soda. Mix 10sec/ Speed 5

  6. Add carrots and walnuts. Mix 15sec/ Speed 2-Reverse mode

  7. Pour into a buttered round tin. Bake for 75min. Let cool

  8. Cover with cream cheese icing

  9. Enjoy!

Going gluten free doesn't mean you'll miss culinary pleasures. But as it is hard to find GF pastry, the best way to enjoy it is to bake it. So here's an easy carrot cake recipe to try

You will need

  • 400g carrots

  • 380g GF flour

  • 300g pineapple

  • 180g honey

  • 150g walnuts

  • 80g raisins

  • 50g coconut oil

  • 4 eggs

  • 1 tsp baking soda

  • 1 tsp vanilla sugar

  • 1 tsp cinnamon

  • 1 tsp Himalaya salt

Instructions

  1. Preheat oven to 165°C

  2. Place carrots, pineapple and dry ingredients into the bowl. Mix 15sec/ Speed 5

  3. Add dry ingredients. Mix 5sec/ Speed 5

  4. Pour into a round tin already covered with baking sheet. Cook for 40 to 60min

  5. Let cool before serving

  6. Enjoy!
