This is a summer recipe...very sweet one but what would life be if we only had bland food? The original recipe used Whiskey but I don't: thank you IC for making my food oh so boring!

You will need

  • 250g chocolate

  • 200g softened butter

  • 70g muscovado sugar

  • 6 eggs

Instructions

  1. Insert the butterfly whisk in the bowl.

  2. Add egg whites. Mix 6min/ 37°C/ Speed 3.5

  3. Set aside

  4. Remove the whisk. Without washing the bowl add chocolate. Mix 10s/ Speed 9

  5. Add butter, egg yolks and sugar. Mix 7min/ 50°C/ Speed 2

  6. Gently add egg whites. Stir with a spatula

  7. Pour into a deep dish.

  8. Freeze for at least 48h

  9. Enjoy!

Peanut butter baby my friends is heaven on a plate! I often bake cookies althoughI'm not a huge fan of this kind of treats. But, but but...once I tried the PB version, I was really amazed how incredibly delicious it is! Plus my GF/IC/PBS diet allows me to enjoy peanut butter anything! Sooo let's go!

You will need

  • 125g soft butter

  • 220g gluten free flour

  • 150g peanut butter

  • 40g muscovado sugar

  • 1 egg

Instructions

  1. Preheat oven to 180°C (or 170°C fan forced)

  2. Line two trays with parchment paper

  3. Place butter and sugar in the bowl. Mix 30s/ Speed 2

  4. Add peanut butter, egg, and flour. Mix 12s/ Speed 4

  5. Shape the dough into small balls

  6. Place the balls on the tray and press down using a fork. Cookie dough is dense, it will not spread like regular cookie dough. Thus it's important not to leave the cookies in a ball shape, otherwise, they'll not bake evenly

  7. Cook for 15min

  8. Set aside to cool

  9. Enjoy!

You will need

  • 1 cup chickpea flour

  • 1/2 cup melted coconut oil

  • 1/4 cup muscovado sugar

  • 1 large egg

  • 1/2 teaspoon baking powder

  • 1/4 tsp baking soda

  • 1/4 tsp kosher salt

  • 1/2 cup raisins

Instructions

  1. Preheat oven to 175°C

  2. Line a sheet pan with parchment paper

  3. Place oil and sugar in the bowl. Mix 1'30"/ Speed 4

  4. 30sec before the end, add the egg through the hole

  5. Add flour, salt, baking soda and baking powder. Knead for 30sec.

  6. Repeat twice

  7. Drop teaspoonfuls of mixture on pan

  8. Bake for 10 minutes

  9. Set aside to cool (and to continue baking) for 15 to 20 minutes

  10. Enjoy!
