Yes, this is the recipe of a "pear compote" and yes babies are not the only humans to eat compotes. Personally, I like it because it is healthy (well, sugar...) and dairy free so it can fit into many diets (ok, not the best option for diabetes) and it is a great way to have kids eat fruits for this recipe can use pears, apples (or both) or any other fruit...You name it!

You will need

  • 500g ripe pears

  • 30g coconut sugar

  • 1 packet vanilla sugar

Instructions

  1. Cut the pears into small pieces and place them in the bowl. Mix 3 mn / 80°C / Speed 1

  2. Add the remaining ingredients. Mix 15 min / 100°C / Speed 1

  3. Mix 1min / Speed 6

  4. Pour into glass jars. Let cool

  5. Enjoy

PS: Can be stored in the fridge for 3 days

And here is the fluffiest gluten free pizza dough I've ever tried! I tried many recipes, and while all these recipes gave very bad tasting results, I decided to find mine on my own, and it did work!

You will need

  • 300ml water

  • 300g GF flour (I use 250g bakers flour and 50g buckwheat or traditional bakers flour)

  • 1 packet dry yiest

  • 2 Tbs. EVOO

  • 1 tsp. Himalaya salt

Instructions

  1. Preheat oven to 250°C

  2. Place water and yiest in the bowl. Mix 2min30/ 37°C/ Speed 1

  3. Add remaining ingredients. Activate the knead option for 4min30

  4. Remove the dough and divide it into 2 balls (each ball will make a 20x20 pizza)

  5. Sprinkle some flour and roll out to make a dough circle

  6. Place the dough onto a pizza trail

  7. Add favorite toppings and cook for 20min (lower rack)

  8. Enjoy!

PS: The result is better with a pizza stone

PS: unused dough can be frozen and used another day

With this recipe you can prepare plain muffins. You can use it as a base recipe to which you can add chocolate chips, fruits, etc. Just close your eyes and let your imagination do the rest

You will need:

  • 200g GF flour

  • 70g muscovado sugar

  • 185ml lactose free milk

  • 35g coconut oil

  • 1 egg

  • 1 packet vanilla sugar

  • 1 packet baking powder

  • 1 pinch Kosher salt


Instructions

  1. Preheat oven to 180°C

  2. Place all the ingredients in the bowl. Mix 30sec/ Speed 5

  3. Line a muffin tin with muffin cases. When I don't have muffin cases, I use small pieces of parchment paper

  4. Spoon the mixture into the muffin cases about 1/5 of the way up

  5. Bake for 25 minutes

  6. Allow to cool in the baking tray for 5 minutes before turning out onto a wire rack to cool

  7. Enjoy!

PS: to prevent your muffins from being dense, don't overmix them
