With this recipe you can prepare plain muffins. You can use it as a base recipe to which you can add chocolate chips, fruits, etc. Just close your eyes and let your imagination do the rest

You will need:
200g GF flour
70g muscovado sugar
185ml lactose free milk
35g coconut oil
1 egg
1 packet vanilla sugar
1 packet baking powder
1 pinch Kosher salt
Instructions
Preheat oven to 180°C
Place all the ingredients in the bowl. Mix 30sec/ Speed 5
Line a muffin tin with muffin cases. When I don't have muffin cases, I use small pieces of parchment paper
Spoon the mixture into the muffin cases about 1/5 of the way up
Bake for 25 minutes
Allow to cool in the baking tray for 5 minutes before turning out onto a wire rack to cool

PS: to prevent your muffins from being dense, don't overmix them
