Gluten free fudgy cake - Certified Thermomix person

Gluten free and guilt free cake!

You will need - Base

  • 200g mix meal (hazelnut, almond, walnut)

  • 10 pistachios (optional)

  • 200g sticky dates (medjool or aiwa type)

  • 20g unsweetened cocoa powder

  • 1 Tbs coconut cream

  • 1pinch kosher salt

You will need - Middle part

  • 250g peanut butter

  • 100g melted coconut oil

  • 50g unsweetened cocoa powder

  • 50g coconut cream

  • 80g coconut sugar

  • 1 pinch kosher salt

You will need - Top

  • 100g peanut butter

  • 100g melted coconut oil

  • 20g unsweetened cocoa powder

  • 20g coconut cream

  • 30g coconut sugar

  • 1 pinch kosher salt

Instructions

  1. Place the base ingredients (apart from pistachios) in the bowl. Mix 20sec/ Speed 10

  2. Add pistachios. Mix 10 sec/ Speed 3/ Reverse blades.

  3. Transfer into a deep mold and press the base until it's coarse. Set aside

  4. Place the middle part ingredients in the bowl. Mix 5sec/ Speed 8

  5. Pour the mixture over the base. Chill for 1h

  6. Place the top ingredients in the bowl. Mixe 5sec/ Speed 8

  7. Pour the mixture over the middle part. Chill for a minimum of 2h

  8. Sprinkle with cocoa powder before serving

  9. Enjoy!
