Red lentils & quinoa balls (GF/PBS friendly) - Certified Thermomix person

Lazy, crazy, easy, vegan, full of proteins, gluten free, PBS friendly, healthy, tasty...What else could one expect from these yummy balls?

You'll need

  • 150g red lentil flour

  • 80g quinoa

  • 110ml water

  • 2 cup rolled oats

  • 1 Tbs chives

  • 1 Tbs dried parsley

  • 1 Tbs EVOO

  • 1/2 tsp Himalaya salt

  • 1/4 tsp black pepper

Directions

  1. Rinse quinoa and place in a bowl with twice the amount of water.

  2. Soak uncovered at room temperature for at least 2 hours, or overnight.

  3. Preheat ovet to 180°C

  4. Drain and rinse once more. Set aside

  5. Place oat flakes in the bowl. Mix 10sec/ Speed 7,5. The aim is to have a bran like texture. Set aside half of the flour (1 cup).

  6. Add the remaining ingredients. Mix 15sec/ Speed 3,4

  7. Shape small balls and roll into ground oat

  8. place on a baking tray already covered with parchment. Bake for 20min or until they turn gold

  9. Serve with salt/garlic/herb flavored cottage cheese

  10. Enjoy!

PS: you can also deep fry the balls for 5min before placing them in the oven. They'll be definitely crunchier, but this option is not PBS friendly as fried food is not recommended for inflammatory conditions.
