Gluten free Pound Cake - Certified Thermomix person

Also known as Madeira cake, yellow cake or loaf cake, the pound cake was called like that it's because the original recipe called for one pound each of flour, sugar, butter, and eggs. I call it sponge cake or "Kika" in Moroccan Arabic and is the cake that you'll find in every house and enjoy eating in very family gathering

You'll need

  • 100g butter

  • 1 + 1/4cup gluten free (cake mix) flour

  • 3/4 cup coconut sugar

  • 1/3 cup sour cream

  • 1/4 cup almond/hazelnut powder

  • 3 eggs

  • 1 tsp baking powder

  • 1 tsp vanilla extract

  • 1/4 tsp Kosher salt

Instructions

  1. Preheat oven to 180°C fan-forced

  2. Place butter, sugar and vanilla extract into the bowl. Mix 45sec/ Speed 3

  3. Scrape down the sides of the bowl. Mix 30sec/ Speed 4 or until pale and creamy (You want the butter and sugar mixture to be pale and creamy before moving onto the next step)

  4. Mix Speed 4 and remove the measuring cup. Add the eggs one at a time

  5. Add the remaining ingredients. Mix 12sec/ Speed 5

  6. Scrape down the sides of the bowl. Mix 8sec/ Speed 5

  7. Transfer the mixture to a loaf tin already covered with parchment paper. Smooth the surface of the mixture.

  8. Bake for 50min. Let cool

  9. Add favorite frosting or glazing.

  10. Enjoy!
