An extra fluffy version for gluten free diets

You will need
280g gluten free flour (I use cake flour)
280ml lactose free milk
40g butter
40g muscovado
2 eggs
1 packet baking powder
1 packet vanilla sugar
1 pinch Kosher salt
Instructions
Place all the ingredients in the bowl. Mix 30s/ Speed 4
Make sure the batter is homogeneous. Otherwise mix again
Pour into a bowl. Let aside for 10min
Meanwhile preheat a pancake maker (medium heat)
Pour the mixture into the pan and cook for about 1min until bubbles start to form
Flip pancakes and cook for up to 60sec
Serve with fruits, honey (or maple syrup) and goat cheese
