A guilt-free salted pancake version!
Zucchini, Oh Zucchini...my eternal frenemy . Myself
You will need
2 zucchinis (about 60g)
50g grated cheese. I use Parmigiano and Comte.
4 TBS Corn starch
4 TBS all purpose GF flour
2 Eggs
1 TBs Chives/Parsley mix
1 packet baking powder
1/2 Tsp Himalaya salt
1/4 TsP powder garlic
Instructions
Place zucchinis in the bowl. Mix 5sec/ Speed 5. Set aside
Place the remaining ingredients in the bowl. Mix 10sec/ Speed 4
Add Zucchinis. Mix 10sec/ Speed 3
Heat a lightly EVOOed frying pan over medium high heat
Scoop the batter onto the pan using approximately 1/4 cup for each pancake
Brown on both sides and serve hot
