Gazpacho (Spanish cold soup) - Certified Thermomix Person

During hot days, we always tend to think about fresh juices but often forget this delicious soup. The original recipe uses cucumber and onion, but the taste was too strong for me, so I adapted the recipe to my own taste

Solution? a (frozen) cheesecake!


"I didn't know that gazpacho soup was meant to be served cold. I called over the chef and told him to take it away and bring it back hot! So he did... the looks on their faces still haunt me today!". Rimmer (Red Dwarf)

You will need

  • 2,5 juicy peeled tomatoes

  • 100g tomato coulis

  • 1/2 red bell pepper (roasted and pealed)

  • 1 shallot (optional)

  • 1 Tbs EVOO

  • 1 Tbs ACV or Xeres vinegar

  • 1/4 ts garlic powder

  • 1/4 ts black pepper

  • 1/4 Himalaya salt

  • 1 pinch Cayenne pepper

Instructions

  1. Place tomatoes and bell pepper in the bowl. Mix 1min/ Speed 8, then 1min/ Speed 5

  2. Add remaining ingredients. Mix 30sec/ Speed 8

  3. If it's too thick, add 20g water.

  4. If it's too acid, add 1/4 ts coconut sugar. Mix 20sec/ Speed 8

  5. Sprinkle with chive or parsley

  6. Enjoy!
