No need to take the plane to taste a delicious Moroccan couscous, Thermomix can do it for you

You will need
500g fine semolina
350g lamb meet
200g turnips halved lengthwise
200g carrots halved lengthwise
200g zucchinis
300g pumpkin
150g peeled tomatoes
100g soaked chickpeas
50g tomato paste
2 jalapeños (optional)
1 diced onion
1 bunch of herbs (parsley and cilantro)
1l water
250 cl EVOO
1tsp salt
1 tsp black pepper
1 tsp ground curcuma
1 tsp cayenne pepper
1 tsp paprika
1 tsp Ras El Hanout (Moroccan spice mix, found in some groceries)
1 tsp salted butter
1 litre d’eau
Instructions
Place onion and tomatoes in the bowl. Mix 5sec/ Speed 5
Scrape down the sides of the bowl. Add meat, EVOO, tomato paste, herbs, butter and spices. Mix 5min/ 100°C/ Stirring mode
Add 100g water. Mix 5sec/ Speed 5. If the broth is thick, add water
Meanwhile place turnips, carrots, jalapeños and pumpkin (skin down) in the basket.
Place zucchinis in the Varoma dish
Add chickpeas in the bowl. Add 650g water
Insert the basket
Place the Varoma over the bowl. Mix 30min/ Varoma/ Stirring mode
Meanwhile wash and drain semolina. Repeat 3 to 4 times. Add some EVOO and set aside
Transfer zucchinis and pumpkin in the Varoma plate
Place semolina in the Varoma. Add 250g inside the bowl.
Place the basket and the Varoma over the bowl. Mix 15min/ Varoma/ Stirring mode
Transfer semolina in a plate then add some broth
Add meat, chickpeas and surround with vegetables.
Pour the remaining broth in a bowl and serve immediately
Enjoy!
PS: for a vegan version, meat can be removed from the recipe
