When you want a sandwich but differently...


"My mom cooked the same food every day - tortillas, beans and meat. If it was enchiladas, it was - tortillas, beans and meat. If it was burritos, it was still - tortillas, beans and meat". Felipe Esparza

You will need

  • 200g flour

  • 110g water

  • 4 ts EVOO

  • 1/2 himalaya salt

Instructions

  1. Place all ingredients in the bowl. Mix 15sec/ Speed 3,5. The dough should be sticky

  2. Transfer the dough into a bowl. Cover with humid warm towel. Leave for 30min

  3. Shape small balls. spread some flour on the counter.

  4. Use a rolling tin to flatten the balls. the wrap should be very thin

  5. In a hot non sticky pan, place the wraps. Let the cook at a medium temperature

  6. Flip the wrap to cook the other side

PS: for soft wraps, as soon as they're cooked, put them into a freezing bag to avoid contact with air.

When bored on a Sunday afternoon, think about what could boost your mind

A Lemon cake obviously!


You will need - Cake

  • 250g flour

  • 3 eggs

  • 150g sugar

  • 20cl double cream

  • 1 packet baking powder

  • 1 lemon

  • 25g melted butter

You will need - Icing

  • 100g icing sugar

  • 15g lemon juice

Instructions

  1. Preheat the oven to 180°C

  2. Insert the whisk in the bowl. Add eggs and sugar. Mix 15min/ Speed 3,5

  3. Remove the whisk. Add flour, baking powder, juice of 1/2 lemon and cream. Mix 40sec/ Speed 3

  4. Pour the mixture in a buttered mold. Cook for 10-20 min (insert a knife to make sure the cake is perfectly cooked)

  5. Place icing sugar and lemon juice in a clean and dry bowl.Mix 2min/ 90°C/ Speed 2

  6. Once the cake cooked and cool, cover the top with your icing.

  7. Chill for 45 minutes.

  8. Enjoy!

This could be used with any berry fruit, so feel free to try it with your favorite one.

You will need

  • 500g fresh strawberries (chopped)

  • 150g coconut sugar

  • juice from 1/2 lemon

Instructions

  1. Place all ingredients in the bowl. Mix 30min/ 100°C/ Speed 1

  2. Mix 30min/ Varoma/ Speed 1

  3. Transfer your jam into glass jars and flip over and let it cool.

  4. Once cool, store in the fridge
