Gram flour, or Garbanzo flour or chickpea flour is a miracle product that doesn't taste good, doesn't smell good, but once cooked has an amazing taste! who could believe this flour is made out of chickpeas? Full of proteins it's gluten free and IC friendly and can be used in different ways. Below is an omelette try-it recipe I just had this morning, and I can say it is really delicious.

You will need

  • 2 Tbs gram flour

  • 3 Tbs lactose free milk (or almond milk)

  • 1 pinch Himalaya salt

  • 1/2 tsp parsley and chives

  • 1 tsp EVOO

  • Vegetables and cottage cheese

Instructions

  1. Preheat a pan to medium heat

  2. Add EVOO

  3. Place flour and milk in the TM. Mix 10sec/Speed 5

  4. Scrape down the sides of the bowl. Mix 5sec/Speed 5

  5. Pour onto the pan. Cook as a normal egg omelette then flip the omelette and let cook for a couple of minutes

  6. Serve with veggies and cheese

  7. Enjoy!

PS1: These are ingredients for 1 omelette. For more, you can easily double the quantities.

PS2: The combination of cheese and gram flour makes it a very delicious omelette

After some crises and 5 different MDs, I realized I developed different food allergies. This means, no dairy, no chocolate, no citrus, no tea, no coffee, no sweets. My first impression was "wait, what? no more tomatoes? no more pasta? no more pizza?" It was not easy to start a gluten free Diet and now I have to go through an even more restrictive diet. Here's when I decided to choose either options: cry and die, or rise again and live with this condition and try other food combination. So to all those people who live with food allergies, I say: don't despair, life is full of other things to try....and here is why I decided not to ditch my cravings and opt for alternatives to tomato sauce, i.e. a version with no tomatoes, and still with a great taste!

You will need

  • 8 red bell peppers

  • 1/4 tsp Himalaya salt

  • 1/4 tsp garlic powder

  • 1 tsp basil

  • 1 tsp parsley

  • 3 Tbs EVOO

  • 1/4 tsp muscovado sugar

Instructions

  1. Preheat oven to 250°C

  2. Wash bell peppers

  3. Roast for 15min

  4. Turn peppers and roast for 15min

  5. Let aside to cool

  6. Remove skin and seeds, and cut into pieces

  7. Place peppers with the remaining ingredients in the TM bowl. Mix 5sec/Speed 5

  8. Scrape down the sides of the bowl. Mix 5sec/Speed 5, then 3sec/ Speed 7

  9. Place the simmering basket. Mix 30min/ 80°C/ Speed 1/Reverse mode

  10. If not completely cooked, add 20min/80°C/ Speed 1/Reverse mode

  11. Enjoy with pasta or pizza!

An extra fluffy version for gluten free diets

You will need

  • 280g gluten free flour (I use cake flour)

  • 280ml lactose free milk

  • 40g butter

  • 40g muscovado

  • 2 eggs

  • 1 packet baking powder

  • 1 packet vanilla sugar

  • 1 pinch Kosher salt

Instructions

  1. Place all the ingredients in the bowl. Mix 30s/ Speed 4

  2. Make sure the batter is homogeneous. Otherwise mix again

  3. Pour into a bowl. Let aside for 10min

  4. Meanwhile preheat a pancake maker (medium heat)

  5. Pour the mixture into the pan and cook for about 1min until bubbles start to form

  6. Flip pancakes and cook for up to 60sec

  7. Serve with fruits, honey (or maple syrup) and goat cheese

  8. Enjoy!
