I've tried many flatbread recipes and this one is full of proteins. You can customize it and add any vegetable you wish, I prefer to have it plain topped with some goat cheese

You'll need

  • 200g red lentil flour

  • 310ml water

  • 1/2 tsp baking powder

  • 1/4 tsp Himalaya salt

  • 1/2 tsp Provence herbs

Directions

  1. Place the ingredients in the bowl. Mix 15sec/ Speed 4

  2. Mix 10sec/ Speed 4,5

  3. Preheat a pancake pan

  4. Pour the batter in a bowl and set aside for a couple of minutes (3 to 5 minutes)

  5. Pour a small amount in the pan as if you were making pancakes

  6. As soon as the batter has some holes and seems dry, flip the flatbread

  7. Cook for a couple of seconds

  8. Sprinkle with goat cheese or any other topping

  9. Enjoy!

GF and PBS diets are not as restrictive as I imagined, one just need to use the right ingredients. Easy to make, this is a rich and creamy dessert to eat anytime of the day. For a flan version, just add caramel sauce and enjoy!

You'll need

  • 3 eggs

  • 300g lactose free milk

  • 35g muscovado

  • 2 GF vanilla packets (about 20g)

Directions

  1. Preheat oven to 180°C

  2. Place all the ingredients in the bowl. Mix 5min/ 70°C/ Speed 4

  3. Pour the mixture into small glass serving jars and plate the jars in a shallow heat resistant ovenware

  4. Make a water bath by filling the dish with enough water to come about halfway (or 3/4) up the sides of the custard jars

  5. Cook for 30min

  6. Allow to cool.

  7. Place in the fridge for 3h

  8. Enjoy!

Chickpea crackers is the answer. What was the question?



You will need

  • 1 cup chickpea flour

  • 3 Tbs water

  • 2 Tbs EVOO

  • 1 Tbs black & white sesame seeds

  • 1 Tbs heart mix of your choice

  • 1 tsp baking powder

  • 1/4 tsp Himalaya salt

Instructions

  1. Preheat oven to 200°C

  2. Place all ingredients (but the seeds) in the bowl. Mix 20s/ Speed 4

  3. Roll out the dough between two sheets of baking sheets until it becomes thin and even (the thinner the better)

  4. Pre-slice the dough into desired shape (I use a crepe tool to gently mark square shapes. It is then easier to hand cut the squares once the dough is baked)

  5. Sprinkle with sesame seeds.

  6. Carefully pull the parchment paper with the crackers onto a baking sheet.

  7. Bake for 17min (until edges turn gold)

  8. Let cool

  9. Enjoy!

PS: when I don't have sesame seeds, I use chia seeds. When I do so - and I often do it - I usually mix seeds with the rest of the ingredients
