I've tried many flatbread recipes and this one is full of proteins. You can customize it and add any vegetable you wish, I prefer to have it plain topped with some goat cheese

You'll need
200g red lentil flour
310ml water
1/2 tsp baking powder
1/4 tsp Himalaya salt
1/2 tsp Provence herbs
Directions
Place the ingredients in the bowl. Mix 15sec/ Speed 4
Mix 10sec/ Speed 4,5
Preheat a pancake pan
Pour the batter in a bowl and set aside for a couple of minutes (3 to 5 minutes)
Pour a small amount in the pan as if you were making pancakes
As soon as the batter has some holes and seems dry, flip the flatbread
Cook for a couple of seconds
Sprinkle with goat cheese or any other topping
