I've tried many waffle recipes but the result was not 100% satisfactory...until I tried this recipe. Maybe the gluten free option gives better results? the thing is that I'm really in love with these waffles and can eat them everyday.

This recipe is:

  • Gluten free

  • IC/PBS friendly

  • Not vegan

"Waffles are pancakes with abs". Unknown

You will need

  • 125g gluten free flour

  • 250ml lactose free milk (I sometimes use 100ml milk + 1 vanilla yogurt)

  • 35g soft ghee or coconut butter

  • 1 egg

  • 1 Tbs Muscovado sugar

  • 1 pinch Kosher salt

  • Optional: vanilla extract

  • Optional: 1/2 pack baking powder

Instructions

  1. Heat your waffle maker before starting

  2. Place all the ingredients in the bowl. Mix 30sec/ Speed 7

  3. Spread some butter on the waffle maker plates. This is an important step if you don't want to end up with soggy waffles.

  4. Using a large wooden spoon, ladle the batter into the waffle maker.

  5. Cook until golden and crisp. Serve warm with cheese or maple syrup

  6. Enjoy!

Does it look like a waffle? yes..Is it a waffle? no!

This is a recipe I just tried while trying to bake diet bread. As I didn't have time, I used the basic ingredients for bread and threw everything in the TM then used the waffle machine instead of the oven (no time to wait, baby, no time to wait!). Suddenly, what was supposed to be bread turned to amazingly delicious thin waffles. If you like flatbread, then yo I'd call it "bread in disguise"and it's perfect for a quick breakfast.

This recipe is:

flour and water can so easily be bread. Myself

You will need

  • 250 g GF mix flour (I used the traditional bread mix)

  • 4 to 6g dehydrated yeast

  • 1/4 tsp Himalaya salt

  • 350 ml lukewarm water. I started with 150ml water then kept adding liquid until I got a "running" mixture but feel free to use less

  • 2 tsp EVOO

Instructions

  1. Place water and yeast in the bowl. Mix 1min30/ 37°C/ Speed 1

  2. Add the remaining ingredients. Mix 4min/ Knead

  3. Meanwhile, turn on a waffle machine (thermostat 4)

  4. Transfer the mixture into a big bowl and start preparing your waffle bread

  5. Add honey and fruits, or for a salted version, add cheese and avocado (I know it's not low carb but it's delicious...no guilt!)

  6. Enjoy!

Stop buying your nougat and make it yourself. It's very easy, and the result is amazingly yummy!

You will need

  • 400g liquid honey

  • 1 egg white

  • 150 to 200g almonds

  • Wafer paper

Instructions

  1. Preheat oven to 180°C.

  2. Roast almonds. Once cool, cut into small pieces. Set aside

  3. Place the butterfly whisk in the bowl. Add egg white. Mix 10sec/ Speed 2

  4. Add honey. Mix 60min/ 100°C/ Speed 2 (with MC out)

  5. Meanwhile, place baking sheet into a tray or a plate.

  6. Cover the surface with wafer paper

  7. You have to be quick: Remove the whisk. Add almonds and stir

  8. Immediately transfer the preparation into the plate

  9. Cover with wafer paper

  10. Chill for 2h

  11. Cut into pieces and enjoy!

PS:

- The final result strongly depends on the chosen honey. I first tried this recipe with multiflower honey and I got a liquid nougat. I'd recommend using orange flower honey instead

- If the result is liquid, freeze the nougat and shape small balls that you can cover with Caramel and chocolate.

- For a more holiday flavor, you can add vanilla
