Heaven in a plate!

The best, the one and only one! An easy recipe for one of the most delicious pies ever

You'll need - Crust

  • Pie crust

or (an easier no bake option)

  • 100g Mcvities like biscuit

  • 25g butter

You'll need - Lemon filling

  • 120 ml to 150 ml lemon juice (about 2 juicy lemons)

  • Zest of 2 very fine lemons (or no zest at all, but zest gives taste)

  • 80g brown sugar

  • 3 small whole eggs (120- 125 g approximately)

  • 20g cornstarch

You'll need - Meringue

  • 100 brown sugar

  • 3 egg whites

  • 1 TbS cornflour

  • 1 ts lemon juice

Directions

  1. Place cookies and butter in the bowl. Mix 15sec / Speed 4.

  2. Put in glass mold or bottom of small bowls

  3. Place in the fridge for a minimum of 1h30min

  4. Wash the bowl

  5. Insert the butterfly whisk to prepare the cream

  6. Grate the zest of lemons in the bowl

  7. Add lemon juice, sugar and eggs. Mix 7min / 80 ° / Speed 3. Remove the cup

  8. Put the cream in the fridge

  9. Wash the bowl

  10. After 1h30 take the biscuit and add a layer of lemon cream. Put in the fridge

  11. It's time to prepare the meringue

  12. In a clean and dry bowl, add sugar and cornstarch. Mix 10sec / Speed 9

  13. Insert the whisk

  14. Add the egg whites and 1lemon juice. Mix 6min / 70 ° / Speed 3 to 5 (gradually)

  15. Put the meringue in a pastry bag and spread on the pie

  16. Brown with a blowtorch

  17. Chill

  18. Enjoy!

Why buy it when you can make your own?

Crunchy or creamy, you should try it. This is a very easy and simple recipe. I swear you'll lick your fingers once you taste it. Of course, you have to love peanut better....hold on! who doesn't???

You'll need

  • 300g Roasted peanuts

  • 20g Brown sugar

  • 20g icing sugar

  • 1 pinch Kosher salt

Directions

  1. Place all the ingredients in the bowl. Mix 10sec/ Speed 7

  2. Scrap down the edges of the bowl. Mix 10sec/ Speed 7

  3. Scrap down the edges of the bowl and adjust salt. Mix 10sec / Speed 7

  4. Mix 10sec / Speed 7 as many times as necessary until desired consistency

  5. Put in a glass jar and enjoy!
