"I am convinced that I am the one who introduced quiche to America". James Beard

You'll need

  • Ready to use crust (or one made by TM)

  • 50g sliced mushrooms

  • 50g spinach (you can use any ingredients, I personally use mushrooms and spinach)

  • 250g milk

  • 30g butter

  • 30g all purpose flour

  • 80g grated cheese (I use Emmental or a mix of Emmental and Gouda)

  • 3 eggs

  • 2 TbS sour cream

  • 1/2 ts salt

  • 1/2 ts pepper

  • 1/4 tsp nutmeg

Directions

  1. Preheat the oven (180°C)

  2. Place mushrooms in the crust

  3. Place milk, butter, flour, salt and pepper in the bowl. Mix 4 min /90°C/Speed 3

  4. Mix Speed 4 then add the rest of the ingredients through the cup hole

  5. Stop the TM

  6. Pour the mixture over the crust

  7. Bake for about 20 min (10min, then keep an eye every 5 min). The quiche will rise but should not burn

  8. Enjoy!

PS1: you can also replace milk butter and flour with 250g mascarpone. In this case, in step 3, you need to mix salt, pepper, mascarpone and the 3 eggs

PS2: If you want to prepare the salmon/leek version, you'll need to cut 2 leeks install pieces, 20g EVOO and 1tsp muscovado in the bowl, and mix 18min/ 100°C/ Speed 1. Same goes for the mushroom/onion version

PS3: For an even stronger taste, I add pieces of camembert or goat cheese before baking
