As delicious as regular crepes

but these are gluten free

You will need

  • 100g rice flour

  • 100g cornstarch

  • 1/2l milk

  • 30g butter

  • 3 eggs

  • 1 pinch salt

PS: I usually don't add sugar in my crepes, but if you wish to, 1 ts should be enough


Instructions

  1. Place butter in the bowl. Mix 2min/ 65°C/ Speed 1

  2. Add remaining ingredients. Mix 20sec/ Speed 7

  3. Mix 5sec/ Speed 10

  4. Transfer in a bowl

  5. Cook in a non-sticking pan

  6. Enjoy!

Here is a healthy version of the famous tortilla chips

Ditch the frying pan, bake your chips for a healthy still crispy snack.

You will need

  • 250g corn flour

  • 35g EVOO

  • 150ml warm water

  • 1 Tbs cayenne pepper

  • 1 ts kosher salt

  • 1 ts paprika

  • 1 ts garlic powder

  • 1 ts cumin

Instructions

  1. Preheat oven to 200°C

  2. Place corn flour, EVOO and salt in the bowl. Mix 3sec/ Speed 4

  3. Add warm water. Mix 5sec/ Speed 4

  4. Activate kneading option. Mix 1,5min

  5. Shape a ball and put in a bowl. Cover with clingfilm. Leave for 15 to 20min

  6. Spread the mixture on a baking tray covered with baking paper and use a rolling pin to get a thin layer

  7. Use a knife or a cookie cutter to cut shapes (I do it the classic way...triangles).

  8. Sprinkle with spices

  9. Bake for 10 to 15min.

  10. Leave to cool

  11. Serve with salsa sauce, guacamole or melted cheese and enjoy!

You will need

  • 500g very cold double cream

  • 1 pinch salt

Instructions

  1. Place cream in the bowl. Add salt

  2. Insert the whisk. Mix 7min/ Speed 4

  3. Place butter in the basket in the bowl and press with the spatula

  4. Pour buttermilk in a different bowl

  5. Place the butter in the bowl again and add some water. Mix 10sec/ Speed 4

  6. Discard extra liquid

  7. Your butter is now ready

  8. Transfer butter in a glass jar and store in the fridge until it turns firm

  9. Spread on toast and enjoy!
