If you've already made peanut butter, then any other nut/seed/nut butter follows the same process


You will need

  • 250g roasted almonds

  • 50g roasted sunflower seeds (I add sunflower seeds for the taste)

  • 20g Brown sugar

  • 20g Icing sugar

  • Kosher salt

I never add oil to my nut butters, my trick is to mix them until their own oil comes out


Instructions

  1. Place all the ingredients in the bowl. Mix 10sec/ Speed 7

  2. Scrape down the edges of the bowl. Mix 10sec/ Speed 7

  3. Scrape down the edges of the bowl and adjust salt. Mix 10sec / Speed 7

  4. Mix 10sec / Speed 7 as many times as necessary until desired consistency

  5. Store in a glass jar

  6. Enjoy!

Remember choco pudding? Guess what.. You can try others versions using fruits.

Here is one of them...

You will need

  • 400g double cream

  • 50g coconut sugar

  • 60g orange juice

  • 30g lemon juice (or grapefruit juice for a bitter flavor)

Instructions

  1. Place cream and sugar in the bowl. Mix 3min/ 90°C/ Speed 2. Remove the measuring cup

  2. Mix 4min/ 100°C/ Speed 2

  3. Stir the pudding (and don't lick the spatula, I know it's mouthwatering)

  4. Pour into small cups (verrines) and chill for at least 3h

  5. Top with fruits before serving

  6. Enjoy!

Delicious and easy to make energy bombs

They're also gluten free

You will need

  • 200g pitted sticky dates (medjool or Aiwa type)

  • 50g walnuts

  • 50g pecan nuts

  • 80g almond powder

  • 20g unsweetened cocoa powder

  • 50g coconut flakes

  • 1 packet vanilla sugar

  • 1 Tbs coconut oil

  • 1 Tbs honey

  • 1 pinch kosher salt

Instructions

  1. Place all ingredients but coconut flakes in the bowl. Mix 20sec/ Speed 10

  2. Spread coconut flakes in a shallow plate

  3. Shape balls or cubes and roll them so they're topped with coconut.

  4. Enjoy!
